An Israeli startup has learned to turn algae into an analogue of smoked salmon.
IFF-Dupont, together with SimpliiGood startup, has developed a technology for making a dish from spirulina, which corresponds to smoked salmon in all organoleptic properties. But it consists of 100% algae, and does not contain a milligram of real fish. This product will be in demand where salmon fishing is problematic or too expensive. SimpliiGood is due to the development of a number of procedures that allow you to give fresh spirulina not only the appearance and texture of fish, but also the taste, as well as the aroma of smoked salmon. It is stated that almost no additional chemicals are used, for example, the characteristic colour is achieved through the release of beta-carotene, which is initially found in algae. The final product contains 40% proteins, and therefore nourishing enough to replace real fish.
